The sake brewing process is focused on pure and unpasteurized sake. They use low temperature fermentation to control the yeast, and then heat and quench it to stabilize the taste. It has a gentle aroma and sweetness that seems to open up as you drink it from snow cooling to flower cooling to cooler temperatures. But I tend to drink early.
