A new project started in Shiwa Town, Iwate Prefecture, the town of sake
The "Hajimari no Sake" was produced from the "Hajimari no Gakko" (School of the Beginning). The water, rice, and yeast of Shiwa Town are used to make this sake, which is produced by the Shiwa Sake Brewery in Shiwa.
The sake was made using a 100 year old method called "Sanki Amazake Moto"!
Shiwa Brewery is famous for its Shiwa Sake, which I also love, so when I was told about it, I had no choice but to buy it and made an immediate decision.
When I drank it, it was soft and mellow on the palate, and the flavor and aroma of the rice spread out.
It is very mellow, probably due to the fact that it is fire-aged.
If this is the beginning, I am looking forward to next year.
