The palate is crisp, with a good balance of acidity and flavor. The aftertaste is crisp and clean, with no sweetness left behind. As the label says, it is designed to be "the ultimate shokuchu-shu," so it is perfect as a shokuchu-shu. Junmai Ginjo, Origarami, raw sake, 55%, about 1600 yen, Otsuka Sake Shop in Honmachi.
