They use a blending technique called "assemblage" used in wine. A blend of Yumeko and Yamadanishiki.
Very light on the palate. It can be drunk smoothly with just sake. It is elegant and easy to drink. I imagined it would have a strong acidity because it is made by the same method as wine, but it was completely different and easy to drink without any habits.
