This is a test brew from Motosaka Sake Brewery in Mie Prefecture, known for its sake shop Hachibei. I bought it because of its name and label.
Most of the specs are undisclosed 🫤 except that it uses a Mie Prefecture yeast called MLA-12 and has a low alcohol content of 14.
I drank it to see what it tasted like and found it to be as light and refreshing as I had imagined, with a moderate sweetness and mild acidity and a well-balanced umami that spread on the palate, perfect for this season 😍ukiki 🐒🐒.
The wine-like mouthfeel makes it easy to drink, even for those who don't like sake.
However, it is a test brew, so I wonder if there will be a chance to see it next time 🥲.
