Purchased at a liquor store near Harada Station in January 2023 and aged
Aged on a trial basis, not refrigerated, but stored at room temperature in a place where it is not exposed to the sun
(immediately after opening)
Drink cold
Slightly cloudy, with small hardened white lees.
Mild aroma
In the mouth, there is a very strong acidity and a full-bodied flavor.
Although it has been aged for a year, it somehow has a fruity flavor with a fresh impression.
The taste is not persistent and disappears quickly.
The aftertaste is refreshing.
When served cold, it tastes like white wine and is better with cheese than sashimi.
Warmed to lukewarm
The sweetness stands out and the taste is gentle, like amazake (sweet sake).
There are fine bubbles and carbonation.
Serve hot
The flavor is strong and unaffected.
Even if it is cooled down, the flavor is still delicious.
It is surprisingly easy to warm up, and the change with aging is enjoyable.

No change in aroma or taste.
Cheese is a better accompaniment than seaweed tsukudani or nameko mushrooms.
