I bought it in the fall and was told to let it sit for a month or two when it was ready, so I let it sit a little longer and it still tastes soooo good!
It has a sweetness and umami...it can be paired with meat and cheese like fruit wine or wine, and it also goes well with things that go well with sake!
I think I'll enjoy a more matured version at home, as it's a bit thicker than I'd like to drink as much as I can, and I'd like to sip it little by little.
