I've had a lot of Akabu, but this is the first time I've had fire-aged in this series💦.
I had the Akabu Junmai Ginjo Yamadanishiki.
The nose has a gorgeous fruity apple-like ginjo aroma 🎵 Mmmm, this aroma is good 😊.
In the mouth, a firm sweetness rushes in, followed by a slight sourness and bitterness, and then a zingy finish with a hint of sweetness and bitterness.

Overall, it is a bit like a matured version of Newborn's Yamada-Nishiki. The aroma, sweetness, and gassiness are superior to Newborn's, but this calmness is also nice 👍I'm going to spend some time with it since it's a 1.5 litre bottle and I want to enjoy it carefully 😊.
