I love this brand, Shinshu Kameari. I love it even more because my favorite person is from Nagano. I'm glad that it's becoming a difficult brand to get these days. It's sad.
This is my first time to drink Junmai. The first time I drank it cold. When I opened the bottle, it was silent and slightly fizzy. A little fruity, then sweetness and bitterness. The bitterness lingers longer than the sweetness. Love the bitterness, and the rice flavor after the bitterness. This order is new to me. Junmai with Ginjo. Ginjo with Junmai.
Recently, I've been soothed a bit by writing to Sake-no-Wa while enjoying some delicious sake. Bonito tataki, chicken thighs grilled crispy with rock salt and black pepper, asparagus, and bell peppers with greens. It's a daily comfort to see how it will change from now on. I also want to love the warmed Shinshu. I wish I could cherish the happiness of a moment. Oh, it's delicious. By all means.
