ちゃそ
Today it will be Bikuyo's Tama label.
It is a sake from Kochi Prefecture.
It just so happens that I've been drinking a lot of Kochi Prefecture sake lately.
The initial aroma is very refreshing. When you actually drink it, it has a citrusy overtone, a slight sweetness, and a solid umami and acidity.
The sharpness is outstanding. In a good sense, nothing is left behind.
I drank it with a side dish of this strong habit of cotton gut, but the raw smell of the cotton gut was washed away.
This is my first time drinking Tama Label, and it is delicious.
It is a model of a clear, dry sake.
I will repeat this next year.
