In some circles, the magic word is junmai ginjo unfiltered nama sake.
As an example, I am also under that magic, so I bought it. I was curious to know what kind of sake it was, as it has a Sake Degree of +8.
Calm aroma, the type that doesn't move anything when the bottle is opened. When you put it in your mouth, you can feel a little chili.
The flavor is so rich that it is hard to believe that it is unfiltered and unpasteurized! It's a bit sticky, like a +8 sake. +The sweetness is not sticky like a +8 sake, but the sweetness from the umami of the rice can be felt well, and the acidity is also strong, making it a cohesive sake.
It has a freshness that is typical of nama-shu, making it easy to drink.
However, I like strong acidity, so I do not mind it at all, but some people may be bothered by the acidity coming out.
Personally, I prefer a strong acidity.
