Toyokuni from the [Recommended Jungin Set] of Gonoi Sake Brewery in Aizu Sakashita-machi, Fukushima Prefecture. Toyokuni Shuzo is located in the same town of Sakashita, but I personally have the impression that it is far behind Tobiroki and Tenmei. A few years ago, a young man returned and drank a summer sake with high expectations. How about this time? The aroma is clear rice. It is clear with a bluish tinge. The taste is... a nice, solid sake. But when the temperature of the cold sake rises, it has a bad aroma like the old sake. It may not be as strong as the previous summer sake, but it definitely has this flavor. I wonder if it is due to the bacteria that comes with the brewery? I wonder if the day when the three breweries in Sakashita-cho will become Sanbae is still a long way off.
