The other day, I drank Kata no Sakura outside, and this time I drank Osaka sake Akizuka at home. Polishing ratio 70%. 100% Yumachi Alcohol content 15 Association 28 yeast, a multi-acid yeast, is used. The brewery is located in Nose-machi, Osaka, a town in the mountains not unlike Osaka, where we used to stop by on our way home from Kyoto when our son was just born 🤔. The aroma is a refreshing combination of grain and citrus. When you drink it, you can taste the citrus acidity, then the rice flavor, then the acidity, and finally the acidity with a bitter taste to finish it off. However, the strength of this acidity makes it great when paired with fatty or strong flavored okazu 😙. It's so unique that it made me want to try Akirika's regular sake 😄.
