Aizu Musume no Mutenshin
I saw this sake at a liquor store for the first time in a while.
It seems to be a sake that has been laid down for a year and a half from brewing to release from the warehouse.
It has a mild aroma derived from rice, and when you put it in your mouth, the umami flavor spreads and is cut off sharply with acidity.
I first visited the brewery in Kadota in July, riding the Aizu Railway,
The wind blowing across the rice fields on that day comes back to my mind....
