We ordered a set of 3 kinds of Denshu (rice wine) bottoms with a choice of a dish.
I chose grilled chicken with sansho.
First of all, a Junmai Ginjo Yamadahou
Sweet fruity ginjo aroma.
The well-balanced sweetness and acidity spread first, and the bitterness that comes from the depths of the umami tightens the whole.
The aftertaste lingers for a long time, but the bitterness and acidity keep it sharp.
