This is a limited edition sake from Saura Shuzo, one of Miyagi's most famous breweries, Urakasumi.
It is made with 70% polished Yamadanishiki rice in a small amount in a traditional wooden vat.
The aroma of the sake has a rich grainy and raisin-like aroma with a soft raisin-like sweetness and bitterness.
The acidity is a soft yogurt type lactic acid bacteria that stays a little bit underneath and softly kicks in.
It can be enjoyed at any temperature, and is sharp cold, and the roundness is emphasized as it warms up, especially lukewarm✨.
If you prefer fruity sake, this may be a little hard to drink, but it is a great match with dark flavors, especially soy sauce and sake dishes😌.
