I've seen this sake in a magazine, and I've also seen people posting about it on Sake no Wa, so I was somewhat curious about it. The image I get from the label is that it is a flavorful sake that spreads slowly. In the magazine, it is listed in the Fresh, Modern and Light Sake section.
The aroma on the rise is quite gentle, and although I can't describe it well, it makes me think that it is a beautiful sake. The aroma on the nose is like a gentle flower, and it is not overly broad.
The first thing you feel when you drink it is its freshness. It is the best feature of this sake. Even though it is a junmai-shu, it has no miscellaneous taste and transparency as if it were a junmai-daiginjo. It is easy to drink without any problems. It is much more beautiful than I had imagined.
There is also a hint of cheese and yogurt.
It is a breakdown of sourness, slight sweetness, rather firm rice flavor, and a slight bitterness to balance it out.
When drunk cold, it is quite light and dry, but as it approaches room temperature, the taste opens up. I like it best when it's lightly chilled, but it's also delicious slightly warm.
It is a sake that you will never get tired of, and you can feel the technology of a brewery that has been in business for over 200 years.
