Saku Hakutsuru Nishiki Junmai Daiginjo. Hakutsuru Shuzo of Nada aimed to develop a sake rice that would surpass Yamadanishiki, and crossed Yamadaho and Watabune for the first time in 70 years to create a brother rice to Yamadanishiki, resulting in Hakutsuru Nishiki. Even 20 years after its birth, only 11 breweries in Japan still brew this rare rice. Today, we will have the Saku version as a sake comparison. It has a fruity aroma like bananas and peaches, and although it is fire-aged, it has a slight gassy feeling in the mouth. The first sip is full of refreshing sweetness, and it finishes lightly with a refreshing acidity. As you continue drinking, the impression of bitterness increases, and you can drink it more refreshingly!
