This is a sake from Wakasa region of Fukui Prefecture - Mihama Town. Heshiko (heshiko) and fugu (blowfish) farming. It is a town rich in the bounty of the sea. My awe-inspiring friend, who moved to Mihama, is working hard for the town development today. I must go see him again. I bought this when I went back to Fukui. This is my first time to drink Hayaseura. I think it is the most famous sake in Fukui after Kuroryu and Bon. What a noble sweetness! There is nothing flabby about it, just a grape-like sweetness that wafts elegantly over the palate. This is followed by a moderate spiciness. Every time I drink it, I feel refreshed. This sake is suitable for early summer. Although it is not from Wakasa, dried ete flounder goes perfectly with it. We also enjoy tempura of wild vegetables given by an elderly lady at a nearby favorite coffee shop (she was on a trip to Nagano, she says). Spring has already come to an end, hasn't it?
