Ah, it is unexpectedly sweet. It has a mango-like acidity. The tangy aftertaste is probably due to the fact that the sake is alkaloated.
Although it is fire-aged, it has the freshness of new sake.
It is rather floral, and the caproic acidity is too strong. It is the kind of sake that tends to be served at sake competitions. It is true that it has a sense of quality.
I wonder if the people who judge the competition buy this kind of sake every time with their own money? For me, Junmai or Tokujun are better suited to my body.
