Well, I had prepared a limited brew of Hiryu🟥 from Shinzawa Shuzo, which has Hakurakusei.
After all, we should drink some local sake to start the New Year off right. ‼️
This Hiryu was a sake I had when I was just about to get into sake and it was unquestionably delicious.
My first "Shu" had the clear, light mouthfeel characteristic of Hiryu. The aroma is a modest apple-like ginjo aroma. It spread quickly and instantly took its place in the New Year and disappeared 🥹.
The taste is just as refreshing, acidic and sharp.
It was a perfect food sake, the kind of finish that Shinzawa-san is already good at 😋💕.
