This is also a Junmai Daiginjo made from 100% special Yamada Nishiki produced in Hyogo Prefecture.
This is the first time for me to try sake from Ehime, but it was very beautiful and delicious!
The aroma on the rise is slightly like white grapes, but when you take a sip, it is an elegant sake with a strong acidity and flavor that spreads more than sweetness.
Rice polishing ratio: 50% (100% Yamada Nishiki from Hyogo Prefecture)
