The acidity and umami are impressive. It is not as sweet as I expected, but I think the slight degree of sweetness is just right.
As I wrote, a gentle Japanese sweetness comes later.
I went there with the intention of buying Genmai and Asahi Koh, but I gave up on Genmai when I found a certain sake in the store 🤣.
I bought them at SAKE FROMAGERIE KOUSOUSAN near Takatori station. A cheese, sake and wine store.
They have some famous brands, but many of them are hard to find in Kansai. Sake from the following brands are available: Drunken Emon, Yamazyu, Nanamizu, Kyokko, Hatsuzakura, Nihon Soul, Yamori, Kinjaku, Genmai, Chukitsune, Ina to Agave, Tsuchida, Yui Yui, Abe, Imi, and a certain person's recommendation. I've never seen Imi though 😅.

I've never had Kyokko's Omachi, but I'm guessing it's made with a gentle sweetness 😳.

I heard that Kyokkyo uses No.6 yeast, so it seems to be a distant relative of Shinsei somehow 🤔.
