We had it at Robata Toudai in Mizonokuchi.
The sake is made from "Koshitanrei," Niigata's best rice for sake brewing,
Makiki-zan subsoil water is used for this sake.
It has a soft, umami flavor with a slightly crisp aftertaste. It is not too assertive, so it is easy to match with food.
