This is a 2-year-old sake produced in 2020.
The aroma is sweet and bitter with a hint of caramel. Yes, it is matured.
On the palate, it starts with a complex flavor, sweet and bitter. It is very gentle. But this baby was quite mischievous right after opening the bottle, and it has become much more rounded in a week. The aftertaste is also slightly gentle. It has a nice and matured taste.
The sweetness of the sake, drawn out by the gentle flavor of the rice oil, is soft and pleasant when paired with the steamed chicken with leek salt sauce.
If I were to compare it to the ending of "Red Pig" in Ghibli, I would say that it is like the pirate alliance at the end of "Red Pig. They are the old men who are drinking in a corner of Hotel Adriano.
