Clear and colorless.
Mild aroma like yogurt.
Smooth drinking and light flavor.
It has a strong acidity, but it is well balanced and goes down smoothly.
Even when heated, it does not become too bitter and gives a sense of umami. It is drier than at room temperature.
It does not have a long aftertaste and can be served with a wide range of dishes. I would like to pair it with yudofu (tofu) and motsu nabe (hot pot with vegetables) in the coming season.
