I had the fire-roasted version of Omachi, which was my favorite among the Jikan. I was surprised when I tried it. I like the Hi-ire version even better. I feel the sweetness and umami strongly. The bitterness and acidity are also strong, and it makes me happy because it is just like Omachi. As with the raw Omachi, the taste is strong, but it is easy to drink and can be drunk with ease. Compared to the raw version, the flavor is stronger and the overall taste is mellower and more rounded. This is the goodness of Hi-ire.
