At fermentopia2023. Next up is a fermen-type sake brewed using the Genroku brewing method, which was a sake brewing method used in the early to mid Edo period. Compared to the modern brewing method, extremely little water is used in the brewing process. This is the first time I have had this sake, and it is delicious with a layered acidity and umami flavor!
