Ryuriki Junmai Sake Shinryu Nishiki 70. It uses 70% polished rice of Ryu-ryoku's original sake brewing rice "Shinryu Nishiki," which was created over a period of 12 years by crossing Yamadanishiki, the king of sake rice, with the legendary "Jinryoku" rice that originated in the town of Mitsu, Hyogo Prefecture. The mild sweetness derived from Yamada-Nishiki, the spreading umami, and the unique acidity in the aftertaste may be derived from Shinryoku, giving it a uniquely interesting taste.
