Sparkling is easy to drink, so it seems like a good idea to serve it as the first toast. It tastes great, too.
However, this is a junmai daiginjo, so it should be very tasty even if it is not sparkling. Why make it sparkling? Maybe to make it easier to drink for those who don't like sake.
