It's softly sweet and sour. It's lighter than the Kaze no Mori (80% polished rice ratio) I've been drinking. There's a sense of stability, but the taste of the tuna slices was so rich that it was a bit too light for that. But it's easy to drink and tasty (*sigh*)

Junmai Nara Sake, unfiltered and unpasteurized
Rice used: 100% Akitsuho (contracted rice) grown in Nara Prefecture
Brewing water: Ultra-hard water, deep groundwater from the Kongoh Katsuragi mountain range
Hardness: about 250mg/L
Fermentation time: 32 days
Rice polishing rate: 65%.
Alcohol content: 14%.
