I decided on a Daiginjo of Yamadanishiki and another bottle of another rice. Let's go with Honkido, which I haven't seen at the liquor store. It's low-al so it's just right for the first night of work after the Bon vacation. Today's work was not engineered at all. Low alcohol on a low-productivity day.
Now, open the bottle. For a jungin, it has a strong taste of rice and a coarseness that can be felt on the tongue. But because it is low alcohol, the cup goes on. This is quite good. It was worth the trip to a sake brewery in Wakayama to carefully select and purchase this sake. I became a fan of Kido.
