Yamazan is one of my favorite sakes, but it is hard to find... Recently, I checked the Instagram of a liquor store I often visit and found information that it would be in stock on Friday! Since I can only go there on Saturdays and Sundays, I visited the store half expecting and half giving up, but luckily there was only one bottle left. I asked the clerk about the aroma of old sake, which I am not very fond of, and was pleasantly surprised to hear that there was no such aroma. I bought it immediately!
When I opened it, there was a rather loud popping sound! Fortunately, it didn't blow out, but there was still quite a bit of fizziness. It is a light cloudy sake.
The aroma is quite subdued with a sweet fruity aroma like red meat melon and ripe apples, and there is also a yogurt-like fermentation. I didn't feel the old sake-like quality I was worried about 😁I felt a strong, tangy carbonation, sweetness and umami first, and later a slightly stronger acidity and a little bit of bitter bitterness. It was a delicious sake with complexity and depth. It was a treat 😊.
