From the Miyoshikiku Shuzo brewery in Tokushima Prefecture... Miyoshikiku Aizan Unfiltered Nama Sake (Shibori the day before) The Shikoku Sake Festival 2023 was held on February 25, 2023, for the first time in four years (it was cancelled due to the Corona disaster), and is a must-attend event for sake drinkers! Every year, this sake is pressed the day before the sake festival and unveiled at the festival. This sake is brewed with "Tokushima yeast" using "Aizan" from Hyogo Prefecture. It is brewed with "Tokushima yeast" using "Aiyama" from Hyogo Prefecture. Because it is made from "unspecified rice", it cannot claim to be a sake with a specific name, but it is a junmai spec! The sweet impression of "Aizan" and "Miyoshikiku" are a good match. Smooth on the palate, with a tropical fruit aroma typical of "Miyoshigiku". The mellow flavor of "Miyoshigiku" is matched with the full-bodied, gentle sweetness of "Aizan". The acidity is well-balanced with a citrusy fruitiness, and combined with the freshness of the freshly-squeezed sake, it makes you want to drink more and more. It is recommended to drink it in a glass that is moderately chilled to let the aroma stand out, but if you warm it up a little, the sweetness will expand even more.
