Not Shimane's Mukyu Tenkaku, but Niigata's Mukyu.
I bought it because it was discounted at Aeon3㌥.
I looked online and found that the Aeon Limited Junmai Daiginjo Uniform Series is sold by 14 different sake breweries.
Breweries like "Gataichi" and "Echigoya" which are placed in Liquaman and other stores.
I had it cold.
The initial aroma is mild, with a hint of alcohol.
The color is clear and slightly yellow.
The mouthfeel is smooth and slightly mineral.
The water seems to be a little hard and minerally with little miscellaneous taste, and it does not expand without much sweetness and flavor.
After swallowing, there is a slight aftertaste of spiciness lingering on the throat and tongue.
Hmmm, I would like to have a little more umami.
The website says that this sake aims to delve into the basics of sake and is the opposite of flashy or maniacal.
Yeah, well, that's what it says.
Ingredients: rice (domestic), rice malt (domestic)
Polishing ratio: 50%.
Alcohol content: 15%.
