I had never tried No. 3 yeast before! It's so rich! Pungent, umami, and astringent. The richness of the flavor is amazing, The second cup is a little more accustomed to the taste, and the richness is no longer felt and the umami has increased, I asked him to wait a day to make it a little milder, It is a strong sake that shows almost no change even after a few days. I would like to purchase the Sansho yeast made at the time of the anniversary if I have the opportunity to do so again.
