Sake from Shiba, Minato-ku!
The only sake brewery in the 23 wards, haven't bought one in ages!
I was looking forward to seeing what kind of sake was made with "sustainable" unwashed rice, which is environmentally friendly, and my impression was that the sake was more crisp and voluminous than regular Omachi.
Maybe a little more acidity would make it more refreshing and easier to drink!
It is more like a junmai sake than a jungin sake.
