The moment you take the lid off, the fresh and calm ginjo aroma wafts in softly ✨ Not too flashy, but a quiet rise that reminds me of something nostalgic, and my expectations are high 🥂.
I was surprised by the graceful sharpness that passes down my throat: ‼️
The soft umami of the rice spreads quickly, and in the second half, a pleasant acidity tightens everything up. There is absolutely no cloying taste, and it is as clear as if it were poured directly from a clear mountain stream.
I paired it with some bonito strips I bought at the local supermarket, and the acidity of the ponzu and the dry aftertaste of this sake were a perfect match ✨ It was the kind of drink that makes you feel like your daily fatigue is quickly fading away 😋.
