Akabu sells out fast, so I also found Jungin Nama Shuzake at Yajima Sake Shop and bought it immediately. 😅
It has a nice balance of the fizziness of nama-shu with a gentle melon-like sweetness, with a moderate acidity and bitterness coming a bit later. As expected, the umami is still there! As with Junmai sake, I think the best time to drink it is when the temperature drops a little and you can taste the roundness in the flavor. I'd like to leave some for the next day to enjoy the changes in flavor, but it won't last an hour before it's empty😅.
