This sake is a reproduction of "Okunoto no Shirakiku Junmai Daiginjo (once-hired)" using "Kanazawa yeast" in cooperation with Aburacho Shuzo to keep Shirafuji Sake Brewery's sake that was damaged by the earthquake alive. It smells like bananas mixed with alcohol. It is almost colorless. Fine bubbles are spreading 😎. A powerful jump of acidity! Then freshness, followed by a hint of sweetness on the tip of the tongue: ☺️ And immediately, from the center of the tongue to the back, astringency and bitterness appear, and we enjoy the collaboration with the fresh sweetness remaining on the tip of the tongue. As you continue drinking and the temperature settles down, the sweetness becomes a little more pronounced. On the second day, after the acidity, the banana-like sweetness asserts itself strongly, followed by the bitterness. The aftertaste after drinking is very tasteful and relaxing 😉. As further days passed, the freshness spread with a very smooth mouthfeel, almost as if I was tasting fruit juice 😁. It is like a soft drink with no peculiarities at all😍.
