Hinohi Hana-no-Kou version brewed by Mr. Matsumoto! It is brewed with the same water as Hana-no-Kou sake, which is very rich in minerals. The sourness on the palate, the smoothness as it goes through the mouth, and the fruity flavor all make it a great food sake.
As expected, we were unable to purchase today's UTAGE Shinmasa, but there are many other sake breweries in Japan that brew sake as good as, or even better than, Shinmasa's. It is not because it is hard to find that it is good, but because everyone has their own tastes and you should find the sake that suits your own tastes.
I personally think that Nichinichi's sake is better than Niimasa's sake as a food sake.
As a sake fan, I like Niimasa as well and would like to try it even if it is difficult to obtain, but I think it is a pity that because it is difficult to obtain, it tends to be preyed upon by those who see sake only as a tool for making money.
I will continue to contribute to this site in the hope that more people will enjoy sake as a drink by enjoying sake from all over Japan, even if only in a small way.
