This is a "Junmai Ginjo Yamada Nishiki Shiragiku" from Sento Shuzo.
It is made from 100% Yamadanishiki rice.
It's a bit quirky and unpleasant on the palate, maybe on purpose, but it's still sweet on the palate and has a nice crispness to it.
It's the "Igosso" sake of Tosa, or maybe it's me today.
