Aged almost 5 years, so a good opportunity to verify how long the fresh smoked sake will last.
The aroma is still a little pineapple-y, but there's also a slight, slightly medicinal bitterness, not unpleasant but still something.
The taste is, well, sweet and sour, but not fruity.
The acidity is still pineapple-like, but the sweetness is thicker, like aged honey.
The bitterness is surprisingly almost non-existent.
I have to say that this is a delicious but different sake.
To sum it up, the pineapple-like fruity flavor doesn't last long, but sweet and sour sake is somehow suitable for aging.
