I am used to drinking sweet sake from the Joetsu area, but I still like Chiyodomitsu.
Chiyonomikari is aiming for the ultimate honjozo.
The rice is polished to a daiginjo-grade ratio and stored at a temperature below 0°C after top brewing.
After the sake is bottled, it is stored and aged at ultra-low temperatures below 0°C (32°F).
The aroma is calm and mellow, with a hint of sweetness.
Mild sweetness.
Light and crisp dry taste with a mild sweetness.
It is a little short on the palate.
It flows and disappears like clear water.
However, I have a feeling that it will warm up quickly...
