Kenkunichi Junmai Ginjo Genshu A more refined and delicate version of the standard dry sake. The first impression is sharpness and sophistication without any cloying taste. The moment you take it into your mouth, you will feel the outstanding sharpness without any residual sugar. As befits its name, "super dry," it has a crisp and pleasant aftertaste that becomes more pleasant the more you drink. Yet, it is not only dry, but also impressive in that it still retains the firmness of the original sake and the gentle flavor of the rice from which it is made. This sense of balance is something that only KENKON ICH, which specializes in food sake, can achieve. It is not overly assertive, and while it complements the food, it does not lose its presence. It is a particularly good match for seafood, and when paired with white fish sashimi, shellfish, or grilled fish, the appeal of the ultra-hot sake becomes even more pronounced. The sensation of taking one sip and then another and not being able to stop going back and forth between the food and the sake is a real pleasure that only this sake can provide. The sake rice used is Miyamanishiki. It was a highly accomplished sake that made me realize once again that it is "not only hot, but super spicy." ✨
