This is the second collaboration with Katsuyama Shuzo, also a Miyagi brewery, following last year.
The collaboration is a blend of the sake made at each brewery, rather than a separation of processes as in DATE SEVEN.
Abekan, who brews a less flashy sake, but one that is honestly focused on the rice, and Katsuyama, who brews a fragrant, bright, and elegant sake. The sake produced by these two breweries, which have a certain symmetry, like a beauty and a beast, is still a masterpiece.
The sake produced by the two breweries is a masterpiece. It has a fresh aroma, a sharp, broad, yet gorgeous edge, and a full flavor. The perfect harmony of the two is a highly finished product.
I had never thought about blending sake, but I guess it is not an easy task. It is not an easy task, especially when you are mixing two different types of sake. The technical skill required to achieve this level of perfection is no mean feat. It is a feat.
