Purchased in Kochi City during a trip to Shikoku. I wanted to buy a sake made with CEL-24 yeast to take home with me when I bought Kochi sake, and after much deliberation, I bought Tosa Shiragiku, which had a fashionable label. I got curious and looked up that the label design was of a flower called Iberis, which is called "Candytuft" (a bunch of sugar candy). Now, let's taste it. The rice polishing ratio is 55%. The aroma is fruity and pineapple-like, typical of CEL-24 yeast. The taste is sweet and sour with a strong acidity. It is an easy-drinking sake with a gorgeous sweet taste that slowly permeates the palate. It is my personal favorite taste.
