At first, it is soft and easy to drink like water, but soon it has a strong flavor. The dryness increases as it warms up from cold.
I was at a tasting event at Kakuguchi Sake Brewery and drank 5 kinds of sake including this one.
I was surprised at how different they tasted even though they were made from the same rice!
This rice has been around for a long time, and even a small amount of polishing can change the flavor. It seems that the less polished the rice is, the more graininess and acidity you can taste.
