Jikon特別純米 火入れ
辛子蓮根
Kakemai Hatan Nishiki ver. tokushin! I like it better than the five million stone version because it has more acidity! Please check out the back label and take a look at it when you drink it. I've bought a whole range of Jikken, but the Special Junmai is the best for evening drinks. It's the type that makes you groan. The Jun-Gin is just beautiful and has a unique bitterness (grape skin in the case of Senbon Nishiki, hard white peaches in the case of Aisan). If you keep it for a while after opening, the alcohol stimulus becomes a little stronger, but the sweetness and richness become stronger and more balanced. Jikan's fire-boiling is a joy to grow.
