I thought there was a sake rice called "Ken-Aizan" but it was just "Aizan" 😆 They say it is called Ken-Aizan because it is made at the foot of Mt.
This sake is basically a once-fired sake, but this is a limited-edition unpasteurized sake for the Yajima Sake Brewery.
It has a sweetness that is typical of Aizan and a gasiness that is typical of nama-zake. I thought it would be more like a low-alcoholic sweet and sour type sake since it is so popular these days, but it is not. It is delicious.
